why can't they just agree that its ridiculous and overly violent to do all that and just have one guy do it cleanly.

Because no one wants to be the first one to tap out. It shows weakness. And they've already familiarized their victims with that level of brutality, so if they ease up then more people will try to play games with them since the punishment isn't as terrifying anymore
