it's just like any cut of ribeye or strip steak, it's tender af easy to cut, and has flavor better than strip steak close to ribeye.... guessing you have never eaten this cut before

you have the same cut called oyster blade but it's not actually the same trim (like a ribeye vs bone in ribeye so the steaks I get here don't look like this

instead they are pre trimmed properly and look like this
