There is no such thing as ideal jaw. The only 2 traits of the lower third that would look good on every single male are : good angularity and a bigonial width 10% smaller than the zygomatic width. Other than that, it’s all about harmony and how the jaw fits your face.

I have no idea what it is. I dont think anyone here has a strict définition for it but to my understanding, its like when someone looks good but its beyond our concrete psl knowledge

What you gave as an example of someone with Harmony was just good ratios and good features. Jaw is a very important feature.
 
If gonions are below bottom lip then the ramus is too long even if it doesn't fit within your ratio. Ideally gonions should be around mouth opening level. If that results in a short ramus then so be it.
