But seriously just doing Grip Lifts and nothing else is so fun and you can do it all day if your tendons get used it it, it has immense carry over to everything that involves your hands

How much time would it take to increase them in size if untrained.

I don't train for size, I train for Density, Wrist movements for size. If you push the volume you can grow them quick, but don't go too hard first, let your tendons adapt. My tendons are very strong.
These are the movements I use daily with high volume:

Expand Your Hand Bands
Captains of Crush
Fat Gripz Extreme Pullups, Wide Grip Pullups, Ring Chinups
1 Arm Hangs
