I get it's making your lifts harder over time by adding reps, weight, or volume

But like let's say in a week I did 45lb dumbell press, when am I supposed to move up that weight when I can do 12 reps of 3 sets?

putting more weight on your dumbbells every week not more reps

When you can lift more weight on an excessive, do it. Watch a video from the YouTube channel "natural hypertrophy" about evolving rep ranges
