Carnivore diet, use to crave it and now don’t?

My father is five foot tall he married a 5’7 women who’s brothers are like 5’9 slightly higher maybe slightly lower, her grandfather was also quite tall. Apparently my father’s grandad was also quite tall, noticably among others. My father grew up during a civil war, and was likely malnourished for part of his life. I am 6 foot one inch. I attribute this height largely to previous genetics, but also due to the diet my mother forced me as a child. She kept me in a mild surplus, fed me lots of fruit, vegetables, but most importantly, meat and dairy. Now that I’m older I maintain, or eat in a slight deficit, so as to stay lean. I consumed A LOTS of meat and dairy. And it’s weird, my family came from a grain slop culture and they largely didn’t eat much meat besides fish. I hated fish, still do, smells off putting to me. But I ate so much meat. And not just musculature, but organs, collagen/skin/gelatin, marrow, even tendons and silver skin. Also dairy maxxed like crazy. At one point, I literally would eat like 90% meat products and only have some vegetables and lemon to garnish it. But now that I’m older.. I don’t feel the same. Infact.. I legit struggle to eat heavy amounts of meat. I always thought this was going to happen, but I’m not sure why. As I grow older I realize for the most part, vegetables aren’t truly the healthiest foods. They need to be boiled heavily, don’t have many nutrients, and can even be mildly poisonous. This is why a raw salad gives me horrible gut cramps. So if that’s the case, why don’t I crave meat anymore? Have I been conditioned this way by false health standards of society, or is this just natural aging Dietary taste, most adults are ok with vegetable's. My body isn’t growing as furiously as it was as a child so is this why? Like literally I want to try carnivore but I struggle to eat plain meat that doesn’t have some grains or vegetables with it.. and seasoning and garnish.. like what am I supposed to do??

I did keto for a short while and felt constantly hungry. Also felt weirdly non energetic but never as tired at the same time. I have no idea how to explain it. I do think though, that higher fat, lower carb, is better for my genetics personally.
 
I cannot stand sea food. The only thing I like, genuinely is caviar or fish eggs, all other sea food smells far too strong and doesn’t even taste good to me. I’d actually rather go vegan than eat sea food for the rest of my life. But vegetarian would be more ideal I could live off dairy.

whatever you do, dont go vegetarian, it will be over, go paul saladino diet maybe, its pretty good, not better than primal but still good

Diary heavy vegetarian I think could work, egg heavy. But idk, my lust for meat is not what it once was.

Likely won’t. I still enjoy meat, but not as much anymore. Feels like I’ve retired life at only 20
