Does anyone know why when I was younger I had tannish olive skin with light brown hair but now that I’m older my skin is less tanned and my hair is dark brown/black?

You usually get darker hair as you age from a child to adult. I noticed this in my primary school Y1 photo. We had a bunch of quite literally white haired kids, and only one of them grew up to have the same white hair; the rest have blonde / dirty blonde hair / light brown.

The tanned skin can be influenced by a lot of the environment and is hard to control, so doubt age did much.

Hair colour usually gets darker as you grow older for blonde men. Tanning isn’t affected by this you probably have less sun exposure. Mark this as solution

It's very normal for hair to darken as we age. (provided we weren't born with jet black hair which is most of the world population) As for skin you must've stepped away from the sun at some point. It's common for kids to play outside and gain a tan, only to lose it a bit as they age. (mine never went away though)

What's your pheno?

Here’s pics for reference. Both during seasons with little sun exposure. Clearly big diff in coloring. Don’t have a great current pic that emphasizes it but you can still see the diff

They're both in vastly different lightings so it's a little hard to really gage the difference in skin tones. But your skin in the first pic looks a bit golden and rosy which are common traits of a tan vs. naturally having tanned skin.
