It's morphology + coloring.

Lets take an East Asian for example.
To get the newly emerging Neo-Sinid (Kpop) phenotype, they'd have to change their morphology (the shape of their face, ex. nose, monolids, maxilla projection, etc.)

For a Nordic to change their phenotype to Mediterranean, they'd have to not only change their coloring, but also their morphology to be more Mediterranean, or else you'll just look like a like a mostly Nordic looking person with Med features.

Phenotype is hard to pin down due to its fluid nature but it is something that exists.

Plus, with different races, there are phenotypes that are blatantly very advantageous and ones that are bad. There are some phenotypes within some races that mog other phenos in different races. Ex. Indo Nordic mogs Mexicid (Aztec phenotype) even though Americans would think that Latino > Indians.
