I can’t help but wonder when we dream whether we are outsiders peering in to different worlds, the barriers between which only lift during sleep..

No. Although the fact that we can't accurately predict what will happen next in our dream is peculiar (when our brain supposedly create them), I don't see how your claim would be more believable than them simply being visualization of our imagination.
