I justa ate a half raw sweet potatoI grew sweet potatoes for a while on my grandparents' farm, like any other root vegetable, it's for the most part in the dirt and is grown with mostly muddy water
if you plan to eat them raw, you can totally do it, but wash them thoroughly first
in terms of nutrition, baking them will not stripe them of any vitamin or minerals ïf you eat them the same day], but it comes at a price
a baked or steamed sweet potato has double the glycemic amount, hence the sweet flavor and better consistency, but is not that high and [unless you're diabetic] is not a threat even in long term consuming
