but what u didn't mention is how thyiocyanates are produced..

broccoli, when chopped and sat for 30 minutes produces myrosinase which mixes with broccoli's glucoraphinin, producing sulforaphane

when this activation of myrosinase is done properly (chopping finely + let sat for 30 mins), the production of sulforaphane is prioritized and thiocyanates production is minimized ....
