Because healthy kids who grow optimally end up taller than their parents. This doesn't mean that height is mostly environmental. A persons individual height is going to be heavily influenced by their parents height which is genetic.

Environment can slowly catch up but it's much easier to miss the boat and be born by a sect that hasn't completely caught up yet. Case and point - the average world height still being below 5'9". Environment is helping increase it, but each individual can only do so much with the genetics they're given.

For example with an optimal environment, you most likely wouldn't have been 6'5" if neither of your parents were above 6ft. Whereas the likelihood would be much higher if they were both 6ft +. You would have needed the genetics for it
