In short, certain genes (including those which control hair colour) can get "turned on" and "turned off" throughout your life (due to any number of factors). A huge factor in which genes are turned on or off is puberty.

But most of them only "turns on" when you hit puberty it's a gene with more melanin than the lighter hair when kid

Just like a lot of other things that happen during puberty
