we all love a good tender juicy steak heres my guide how to do that everytime. first buy a quality piece of beef usda choice or prime. next step wipe your steak down/scrape any bone residue off it will get chalky and taste weird. next step salt steak evenly and let sit for 30 minutes-2 hours this is called a dry brine. now your steak has rested with the salt turn your oven on to 350 and throw the steaks in until they reach about 90 degrees F internal. pull steaks out the oven and pa dry with a towel. now get a cast iron or stainless steel pan and add your beef tallow or whatever oil you prefer. let this heat until its very hot. throw your steak in after its patted dry you wont get a crust if you dont pat it dry it will be a gray sad waste of beef. sear each side for 2 minutes or until 115-120 degrees f internal. let rest for 10-15 minutes. boom you have tender juicy steak. for extra flavor right before you pull the steaks out the pan throw in some herbs and garlic and butter and baste tha boy until butter smells nutty and foamy. hope you enjoy lmk if i should do more cooking threads because i a master chef
