how to make a loaf of sourdough bread

ok so basically sourdough is just flour water salt + starter but the timing matters way more than the ingredients

mix 500g bread flour + like 300g water first

let that sit like 30-45 min (thats autolyse but whatever)

then add

100g active starter (it gotta be bubbly not dead)

10g salt

the last 50g water

mix it till it comes together its gonna feel kinda sticky thats normal

now bulk ferment just let it sit on the counter for like 3-5 hours

every 30 min do stretch and folds (like 3-4 times total)

just grab the dough, stretch it up, fold it over itself

it’ll go from ugly and shaggy smooth and kinda bouncy

dump it out, shape it lightly into a ball

let it chill like 15-20 min

then shape it tighter (this part matters, get tension on it)

throw it in a floured bowl or banneton

put it in the fridge overnight (like 8-16 hrs)

this is where the flavor actually gets good

next day

preheat oven to 475 with a dutch oven inside

flip dough out, score it

bake 20 min covered then 20-25 uncovered

let it cool before cutting or you’ll ruin it (fr this part sucks but matters)

buying it is ok but nothing beats having a fresh loaf you made yourself. and bakerys over price tf out it and if you buy it from grocery store its full of random ingredients

Yeah I get mine from farmers market and make sure it’s good. But how long would it take to make this??

sourdough starter takes around a week but if you go to local bakery they will most likely sell you one and they can last litterally forever if taken care off just dont use processed flour you want unbleached flour and regular tap water is fine. 2 days
