Like the ancestors of white people were ethnics but their kids had mutations and the ethnic parents died leaving behind only white people. Also there was race mixings going on as well but since both parental races died out they left behind only the mixed race children.
Like how these butterflies evolved to look like leaves:
Similar case: if blacks and whites mix into one race then a blackout happens and everything is forgotten. Then nobody would have guessed those children came out of two such drastically different races. These off spring would think they were "pure" and always looked like that.
