i've never really eaten a good steak but i go with rare. I like flavor and juiciness and don't like chewiness and it's safe because a steak is a solid hunk of meat so you only have to cook the outside, the inside has no bacteria in it so you don't have to cook it.

Nice. On the other side chicken (which I've been eating since I was little because I'm a curry), can't be undercooked because of bacteria. It also is too chewy and tastes like shit.
