Italian food in my experience is very hit or miss, especially when compared to consistently bold and flavorful dishes from like Indian, Chinese Mexican restaurants. Italian dishes are very simple. Hardly 3-4 ingredients means there's very little room to hide behind complex spices or sauces. A tomato pasta, for instance, can taste rich and vibrant if made with ripe San Marzano tomatoes, fresh basil, and high-quality olive oilโ€”but bland and watery if those ingredients aren't top-tier Because of this Italian food often feel underwhelming. I've had good Italian food but also very mediocre Italian food

In contrast, Indian and Mexican cuisines have pack layers of flavor with their use of spices, herbs, and slow cooking techniques. It is like a explosion if flavour in every bite you take. Even a street taco stand in Mexico or a small restaurants offer meals bursting with depth and intensity. Both Indian and Mexican food is them more forgiving when it comes to ingredient quality. Italian food, on the other hand, is heavily ingredient-driven, especially in dishes like Caprese salads, risottos, or bruschetta. If the cheese isn't fresh, or the bread is stale, the dish simply falls flat.

Italian food is also the same 3-4 flavours being played around. Italian food is good don't get me wrong much better than all other cusines in Europe but overrated imo.

it's not very rich in strange dopaminergic processed sauces (as kebab etc)... it's more stuff that if it's of quality it's good, if the ingredients are of low quality it sucks

A perfect carbonara, for example demands precise timing and quality ingredients-genuine guanciale, Pecorino Romano, and just the right egg-to-pasta ratio. Without finesse, it turns into scrambled eggs and greasy noodles.

There are many Italian dishes, there are many strong and flavourful dishes, they're just not mainstream enough like pizza and pasta...

Casu Marzu for example, they say it's very good... You need stomach to eat it tho.

Or for example Nduja is a famous Calabrian sausage, it's very spicy.

I doubt you can find any of these things in the US, also because Casu Marzu is illegal.

I won't lie i know shit about mexican and indian cuisines(except the curry jfl) but I understand your point. Italian food is mostly carbs with different ingredients, but the variety is very good. Internationally even so called italian restaurants wil always do only the most known food.

Yeah internetonally italian food is actually very poor represented. There are so many different foods across all the regions compared to the rest of Europe it's insane
A whole pizza Margherita where I live costs around 6 euros
Same, a medium one at least. Or a medium one with mozzarella cheese and raw ham 10 euros max

Yup, 10 euros is the maximum, but for other kind of pizzas, for Margherita pizza is always like 6-7 euros... But I live in a non-turistic area, in Milan or Rome I am pretty sure it's more expensive.

Italian places are generally considered upscale dining. Everything is expensive. It is formal sit down kind of affair. A Margherita pizza is like $20 at least

In touristic places yes, and they take advantage of this of course. But otherwise the rest of the country is not that expensive, and it makes sense. Most jobs in this country didn't see any salary increase since a long time, it's a very bad situation with poverty rates increasing every year since covid.

A Margherita pizza is like $20 at least
In big cities especially near downtown yeah, don't expect to pay it anything less if you go to Venice or Milan especially downtown like i said. In other parts outside of the big touristic cities the prices are matched to most salaries.

Carbonara is not complicated to make, two main tricks are needed: egg temperature around 70 (not much higher than pasteurisation temperature) and the pecorino cheese should be mixed with cornstarch+water to limit or avoid stringy effects
