I am using beef for this. I let the excess juices drip off then put it in a jar with some sauerkraut juice to kickstart fermentation, letting excess juices drain again. I then put it into a jar almost air tight so the meat gets some air. Then i filled a pot with 26° water and put in the jar like this, making sure the water doesn't reach the ledge of the jar and seep in.
