Making high meat for the first time.

I am using beef for this. I let the excess juices drip off then put it in a jar with some sauerkraut juice to kickstart fermentation, letting excess juices drain again. I then put it into a jar almost air tight so the meat gets some air. Then i filled a pot with 26° water and put in the jar like this, making sure the water doesn't reach the ledge of the jar and seep in.

May post update and share my experience after eating this bacteria bomb.
