Type IV hypersensitivity reaction:

Gliadin, a component of gluten gets deaminated by tissue tranglutaminase in the intestines; the Deaminated Gliadin gets presented to T memory cells (thats been formed after the initial exposure to the allergen, also known as sensitization) by Antigen presenting cells, in turn, this causes an immunologic reaction: autoimmune cells destroy Villi of the small intestine, namely the duodenum, resulting in an effacement of the absorptive brush border, which leads to malabsorption;

Carbs remain in the intestinal lumen, drawing water to it, causing osmotic diarrhea, Fats also persist in the intestines, resulting in greasy stools; Iron, which is mostly reabsorbed in this part of the GI tract, also gets wasted; In turn, we get Weight loss and Iron deficiency anemia;

This disease can also present with Skin findings, specifically 'Dermatitis Herpetiformis': Herpes like lesions diffusely spread all over the body, caused by IgA antibodies depositing in the dermal papillae;
