it's only in the pan for like a minute on max heat so the sides are hot and the inside is medium hot
never had horsemeat that was tough to chew tbh

Had one when I was visiting some ranch and never got to try it again. Horse meat is not very accessible to begin with anyways would've loved to try it again.
