Various reasons. Here are the most common ones in my opinion.

1. Men are stupid.
Not much to say here. They think that their wife wasn't really in control and the other guy was the one that "manipulated" her into getting into bed with him

2. Testosterone thing.
Animalistic logic. Naturally you don't beat the shit out of the female you think to be your mate. You still want your mate in the long run.
However, it's totally cool to "eliminate" your competition

3. Sometimes it's justified.
Most times guys can tell if the woman they are fucking is married or in a r/s. Especially if they are fucking constantly. Guys aren't THAT silly.
And it's insane how many guys get off on fucking married women/attached women. Forbidden fruit psychology.
So if the guy knew, I think it's justifiable if the cuckold wants to "settle the score"
