The structure is determined from the birth and cannot be changed afterwards. bones only grow in size, but never remodels.

all they did was just losing some weight to define them.

I also hope you realize the "skull growing" you speak of indeed counts as a change in bone structure.
 
Thats not true though. Seen lots of examples of people making some changes without surgery. Of course its not massive changes like someone whose boneless changng into brad pitts skull or anything like that, but there are factors that can contribute to making changes over time.
