Stealing and antitheft gates

Hello
How do anti theft gates in shops work? I know for example in clothes shops the goods have this signal emitting thingy that the clerk removes when you pay for it. But I've seen the same antitheft gates in shops where the goods have no such signal emitting tag. So how do thes shits work? I know from experience that they don't detect bar codes. Anybody have some xperience when it comes to this matter?

Simple Shoplifting method you can try:
1. get a ton of avocados/oranges/whatever fruit you like
2. buy other things
3. go to self-checkout
4. dont pay for the fruits

the bags for holding fruit/vegetables cant be scanned by the gates
