During the ice age that lasted thousands of years, carbs didn't exist and people survived on meat and milk. What happened during that time was natural selection, and all human soy herbivores that didn't prospore well with meat products died off leaving only chad meat eaters to spread their genes during the harsh climate. Now all Europeans that exist descent from those meat eaters and we are mostly adapted to thrive on meat and not plants. There is multiple evidence for this like for example the Dinaric people are tall as fuck cause their ancestors exclusively ate mammoth meat and nothing else.
Carbs maybe more important for non Euros tho where there was no ice age and natural selection didn't happen. I've even seen this be the case on r/carnivore where some people that complained how a carnivore diet didn't sit with them well were in big majority non European which proves my hypothesis.
