Vital wheat gluten: good protein but massive bloating?

My mom be making this beef type of shit with a powder called “Vital wheat gluten”. This powder contains in a 1/4 cup: 120 calories, 2g fat, 3g carbs and 24 grams of protein. I know that wheat bloats like a bitch(so I heard I haven’t actually done extensive research) but i’m going to the gym starting recently trying to cut 40 lbs and the protein to cal ratio seems so good to not consume. Are there any downsides to “Vital wheat gluten” if so lmk cus I don’t want to be ingesting some goyslop shit.

Ps. I am not vegan and I do eat beef its just a recipe that makes something that looks like beef in a slow cooker
