What is the point of denying something that you both know it's true?

I've seen people behave this way. No, it's not true. No it didn't happen. No I didn't do it or say it. Yet you both know it's true. But they deny and deny and deny.

Can someone help me understand? I'm guessing psychological issues. Is there anything else?
