These are examples of the underside of someone’s jaw. On (b) what causes the bottom of the ramus to curl inwards rather than continuing outwards and what’s it’s called?

What?

I suppose you're referring to gonions, the ramus will "curl inwards" if you have inward gonions, and it will "continue outwards" if they're flared

or just a different jaw angle but thats also influenced by the gonions
