Would you invest it all with the chance of making a lot of money in return, but it might take a few years for the ROI and still it isn't guaranteed, or play it safe and just get the surgeries you want but be left with less to invest? If you'd choose the latter, how much would you spend?

Stupid idea. It's an opportunity not everyone gets and you're going to throw it away just so you can say you worked for it instead? You get one life and time's constantly running out, this money would help you get to your financial end goal far quicker so you can spend less time slaving away for money and instead you can live your life for longer. You still have to work hard when investing money.
