This is cope, cope on a massive scale. 'Indian' food mainly comes from Pakistan. Pakistani food is Central Asian and Turkic in origin. The creation of what we would regard as 'modern-day Indian' food could be traced to the times of Delhi sultanate and the Mughal Empire -- even going 500 years further back than that. These Central Asian/Turkic emperors conquered large parts of what can be considered large parts of Pakistan, and northern India. And so, with their ever unending goal of pushing southwards in to the heartland of Hindustan, they drew from the men of Punjab and Afghanistan. It was in these army camps that widely consisted of the ancestors of modern-day Pakistanis where modern-day Indian food was created. It's also why when travellers go to India, then Pakistan they discover that Pakistani food is vastly superior. Pakistan food is closer to its origin, on the basis of it neighbouring Central Asia. Indian food had the unfortunate mishap of becoming more 'vegan' -- so thus, dishes that originally contained a massive of amount of meat were 'veganised' to fit the dietary needs of Indians. It's important to note this: all Indian dishes are Pakistani, but not all Pakistani dishes are Indian. It's why most travellers also note the vast variety of dishes Pakistan has, while India has a couple signature substandard dishes it lauds.
