The „risk“ with salmonella and other bacterias is in my opinion not worth the mention. Its 1:1.000.000 well sourced and even if you get salmonella once in your life, the positive benefit associated with Raw meat is making it still a net negative.

To get to the point: Brain isnt the same. Brain carries risk of prions. If you get that, goodbye. Not a gamble id take.

Brain is mostly good for omega3, phospholipids and cholesterol. All of the above should be supplemented either way (o3) and others you can get from other stuff easily.

Now for testes:

Make a request to your local butcher that you want them. If they comply, you get it the fastest. They arent business hungry people, they still support you or at least try to from experience.

Only problem: youll have to ride and get it yourself. No ordering instantly frozen meat.

You don’t need to eat the whole animal always. Think about a good risk/reward balancing.

If you want those parts, skip the middlemen and talk to small farmers who handle everything themselves.
Offer to take what they’d otherwise throw away. It’s the only way to get the real stuff these days.

The regulation on brain makes sense, its not as safe as other compounds and not as necessary as liver or muscle meat. Nobody needs to eat a brain.
