Adaption to environment and other circumstances, that is basically evolution and epigenetics.

Some genes are off, some are on, some are upregulated and some more downregulated.
There are several systems through which organisms can communicate with eachother:
Pathways, Hormones (free-roaming), immunosystem itself to certain extent (but usually it still communicates through the first 2 mentioned).
They communicate with eachother and decide how to adapt to the environment.
E.g. " To respond to this inflammation in that area, we upregulate X Pathway which tells another organism to send Y hormones to the area of inflammation which in turn stick to their specific receptors to transcribe Z information or get information from them"

In a broader spectrum there are indeed tendencies under ethnic groups ect. who share common presets of Genes and epigenomes.
That is why it would be wise to distinguish berween racial/ethnical groups like the Han people of China.
