There is probably a learned behavioral component, but it mostly just that fat women are what is attainable to them. Speaking specifically as to fat white women. The percentage of black women over the age over 25 that are obese is crazy high, more than 50%, so it is not like they have much option there. Black men with very high SMV, like pro athletes or Doctors, rarely marry fat women, black or white.
