The problem is vegans nutritional arguments are easily debunked and refuted. So called morality and ethics (religious beliefs), which they base their argument on are subjective and almost impossible to refute. The victim of veganism will just get angry as they feel like you have attacked them and want to bring them harm. It is irrational and a stupid ascetic practice but the vegan believes it to be hard and lies to themselves and copes and digs his own grave, till they realize they are sick or they die.
