Calories is a flawed concept. So no.

this kind of diet at 1300kcal wouldn't be sustainable in the longterm anyway
 
You'd be fine. Always eat till satiation. I'm assuming you're eating it all raw?

as long as your eating enough fats, your hormones will be fine, dont starve tho its unnecessary cortisol
It would be a 700 caloric deficit because I am sedentary throughout the day. I actually am trying very hard to avoid cortisol. Maybe it’s my genes, but I feel like doing cardio elevates my cortisol more than anything. Would eating less but not moving much bring up cortisol a lot?

running and hard cardio raises cortisol, normal walking will not raise as much and burns fat rather then carbs

Calories from different sources aren't equal, 1000 calories of protein aren't the same as 1000 calories of sugar. Your body burns energy to break your food down into the fuel that it can use and calories from different sources require different amounts of energy to break down by your body. So while sugar is basically a literal 1000 calories because it more or less is already in a usable form, protein is more like 700 actual calories because your body burns like 30% of its worth just to make it usable.
