Lighting angles change.
Another thing is the graininess of the picture which highlights the dark crevices of the face which ruins definition this is primarily sen in pictures taken with less light source present, this makes a face look more like a potato.

Another thing is in the mirror humans natrally subconsciously relax their face into more appealing poses which can also make them look better it’s psychological though however in pictures as you cannot see yourself this doesn’t occur when the photos being taken
