In theory the avidin binds to the biotin in the yolks right?

Not to base everything off Aajonus but he says its fine
"
A: In my book there is a misprint. There was a spell check that went through and changed avidin to albumin. So, it is the avidin that binds with the biotin – that only happens in a chemistry lab and it does not happen in the body.

G: So, are you saying raw eggs do not?

A: No, they do not.

G: So, the people who are saying that are saying it because –

A: It happens in a laboratory, but it does not happen in the human body. You use a lot of biotin in the process of changing over biocarbons in the body. So, when you get raw eggs you are you going to use that biotin in it to change over, and you are going to find avidin present within that complex, but it is not a deprivation – it is a utilization to transport biocarbons. And I mentioned that in the book. Just remember: when you get to that part that talks about albumin it is supposed to be avidin."
TLDR: its useful and won't deprive you with its supposed anti nutrient factors
Despite that, for your specific goals of brain quality I think its better to just toss the whites, keep the yolk
"
No, biocarbons are when we have used something to utilize it as fuel and there's carbon left over, those biocarbons, no matter what it is we've used to burn whether it's carbohydrate or fat or proteins in the form of pyruvate, there's a carbon left over. Always those carbons, no matter what they are, are attached to that avidin and biotin mixture. So what they've done, is they've pulled out toxins. You'll have less of those carbons if you eat raw foods. You don't have an overabundance of them. But when you eat cooked foods, you've got a high rate of them. Because again, you go into an AGE that's very similar to the carbon, and then you'll find it bound in that binding process of the avidin and biotin. But it doesn't stop it from working. Means there'll be less biotin for the brain activity, yes. But there's no ill symptom from it as the conclusion was formed. Was a very ill-formed conclusion."
TLDR: wont cause biotin deficiency but means less of it will be usable for brain function
Biotin does seem very important, I think you just toss the egg whites but it won't be the end of the world if you consume them
