I've been one for about two years as well. I just lost the taste for meat and couldn't eat it anymore without it feeling sick and unnecessary. My energy levels got higher after switching too.
Do you have any suggestions on what type of foods that I consider? I usually eat roti + chicken/fish curry for dinner. And burgers when I eat out. Trynna think of a substitute

If you combine a grain and a legume you get a complete protein, so you could eat beans and rice and have a complete protein, and there are lots of other variations. I'm sure there are a ton of recipes you can find. I eat a lot of beans and I like dark leafy greens as well like kale. I also like vegan curry quite a bit and stir fried veggies.

Yes, this is correct. Plants have non-haem iron, and non-haem iron is less bioavailable, but this is not a problem because (1) you can consume vitamin C with iron to increase absorbtion and (2) you can eat more of the plant based iron source to make up for the lower absorbtion and (3) you can eat multi mineral and multivitamin tablets to be certain that you are getting all the iron that your body needs. A lot of vegans have good iron levels after many years.
It is true that humans cannot obtain vitamin B12 from plants, but this is not a problem because you just need to take a high dose vitamin B12 tablet and not worry about this.
This is why we cook and prepare vegetables, or we just avoid eating those vegetables if there is a concern. A fundamental rule of Toxicology is "the dose makes the poison". You do not really need to eat raw vegetables. There are alternatives to raw vegetables.
You do not need to risk your health because there is no risk in the first place as long as you have the knowledge and access to multivitamins and minerals. We do not put non-human animal lives above human (also animals) lives. We see them as either equals or just conscious and sentient individuals that do not deserve to experience pointless suffering caused by humans.

I take multivitamins including B12 and I haven't had any problems. I haven't had a blood test in about a year, but it came back with flying colors for pretty much everything, and that was after already having been vegan for a year.
