beef liver has every nutrient btw, if you even fucking mention vitamin C it just proves you’re clueless because it competes with dietary glucose at the receptor. glucose inhibits (on average) 56% of vitamin C absorption in the gut, and then further blocks use by binding to the same receptors vitamin C would have bound to. on carnivore, near 100% of vitamin C is absorbed in the gut, and is then transported much more efficiently using DHA (which you get more of on carnivore). you’re wrong, if what you said was even remotely true then the inuit would all be dead right now

Raw beef liver has more vitamin C, B1, B5, folate, slightly more B2, B3, B6, B12, vitamin A and E than boiled liver because heat and water loss reduce heat sensitive vitamins by 10–50%, cooked liver has higher protein calories, iron, zinc, copper, selenium, phosphorus, potassium and sodium per 100 g due to water evaporation concentrating nutrients, vitamins D and K remain mostly stable, so raw liver maximizes heat sensitive vitamins while cooked liver maximizes protein and mineral density both are nutrient dense tbh
