They may admit to not be able to definitively know but will claim that given the available body of evidence their theories are almost certainly true. And if you disagree or question them they get irate with you and call you stupid. And claim that if you have a better theory then just propose it and collect your nobel prize, as if it's as simple as ordering a pizza, or that peer review is objective and not just a bunch of midwits circlejerking one another. They're trying to have their cake and eat it too. They're not open-minded whatsoever.
