build trust over time
talk to them so you know when they go on holiday
or your job may include petsitting when they are away (you now have their keys)
go to a key shop and get a copy of the keys and boom next time they go away when you know this tell them you are quitting your job, give your keys back blah blah and then in the next 3 days (for example) they go on holiday just use your copy of the keys and go in and out and slowly start to steal
