Which one is the best book to read when we take into account historical accuracy and how entertaining stories the books have? Not interested in converting to any religion
 
The torah is part of the Hebrew Bible which is part of the Christian Bible

It's apples and oranges compared to the Quran because they're compilations of various authors over centuries. The Quran is from one individual over 13 years

Read 3 of them is my recommendation. But look for good versions because a lot of translations and reinterpretations are really hurtful and misleading for the original purposes of the three books.

I can read random passages not whole books no time and energy for that

Albeit reading them on long flights could be ok

That's the best to be honest, to read them completely with time. They are the 3 most important and influential books in human history, so they deserve at least that.
