Inflation is how much stuff increases in value over a certain timeframe.

If in 2020 a yogurt cost 100 dollars but in 2021 it costs 101 dollars, that item inflated by 1%.

When people talk about inflation in politics, they're usually talking about the averaged out change in the price of many different goods. Basically an inflation of 8.3% means everything on average is 8.3% more expensive.
