Here are some things you must know about antinutrients:1: They usually only affect the absorption of their own nutrients or nutrients from foods they are eaten with. This means that you can eat a lunch full of phytates but absorb plenty of iron at dinner.2: You can counteract or deactivate all but one common antinutrient - Goitrogens. Lectins and Avidin are deactivated by cooking, while Phytates are counteracted by combining a food with a source of Vitamin C or can be degraded by fermentation and sprouting. You can also cook a phytate-rich food with a serving of onions or garlic. Tannins are counteracted by larger doses of Vitamin C, as well. To avoid harmful effects on your thyroid that goitrogens can cause, you should eat a good source of Iodine like nori or supplements every day.3: Antinutrients have never been observed to "destroy your gut" as many carnivores will claim.4: Many "antinutrients" are actually very beneficial to your health. Goitrogenic compounds in cruciferous vegetables fight both breast and prostate cancer. So do phytates and tannins - especially those in apple skin."
Zinc can reduce the absorption of other minerals like copper, calcium, magnesium etc. Most minerals do the same thing. That’s why the whole “veggies have aNtiNuTriEnTs “ argument is so dumb and poorly researched. Almost anything u eat is gonna increase something and decrease something else
