I think it makes your entire face shorter and you can draw in air more easily

It seems that a vaulted palate would translate to longer and narrower face with less forward projection. Cheeks and other soft tissue compress the palate so that it collapses into itself, which causes the vault

Ideal is flat, yes, but flat is the opposite of deep. A deep palate would inevitably be concave, whereas a flat palate would inevitably be shallow. A wide deep palate could appear somewhat flat, though.
