"Gook" was actually coined in the early 1900's when we (Americans) took the Philippines from Spain. It's how our soldiers mocked the locals speaking their native tongue. Sounded to us like they just keep saying "Gook gook gook gook", so that's what we started calling them. Today it still applies to Filipinos, but also to Koreans and South East Asians. "Jap" or "Nipp" refers to Japanese, while "Chink" refers to Chinese. "Dink" refers specifically to Vietnamese, and I have no clue why. "Slopes" or "Zipper Heads" refers to all Asians.

Australia's pretty interesting because they have a lot of funny ways to referring to Asians. "Yelvises" for example = Yellow Elvis, because a lot of them in the 90's sported the iconic Elvis haircut for some reason. "Canardlys" is another one they got. It means "can hardly". The logic being that their eyes are so squinty that they can hardly see.
