I know a kebab vendor who has a business in a square that used to be very busy. Next to the vendor was a local sandwich shop which, although not very clean and not very healthy, at least met some hygienic standards and the sandwiches were good. The kebabs, on the other hand, sucked, but people went there. The shop closed many times because the food was contaminated.

Shawarma is fine, its literally just marinated chicken/lamb on skewers,
