Our digestive system is much simpler than monkeys and we have a noticeable smaller ribcage, our common ancestors divided and for us to have more brain development we started eating easy to digest food (cooked meats and eggs, fruits, animal fats, lactose, honey), neither raw meat/eggs or veggies are optimal food for us to eat, which is why when we eat seeds or complex carbs we shit a lot, because we couldn't digest most of it

Because heat denatures proteins, they come folded and held together by hydrogen bonds, our digestive enzymes like pepsin first have to unwind this folds before cutting the peptide chains so cooking accelerates this process, meaning we use less energy for digestion, also connective proteins / tissue turns into a gelatin like substance with heat which also makes it easier to digest, as an example, collagen comes in a tight triple helix structure and is stabilized by cross links, pepsin and trypsin have limited access to those peptide bonds when collagen is intact so only a small fraction breaks down in the stomach

i mean aside from this you can even try for yourself, there's not a one size fits all when it comes to diet but usually people that go on carnivore and eat raw will have a higher volume of feces compared to carnivores that cook their meat meaning of course that there's more bioavailability in cooked food, this is also why vegans shit a lot, because complex carbs are super hard to digest so we can only use a small fraction of it for proper digestion
