Selection is usually the strongest influence on evolution, but you would even get differences, simply due to genetic drift.
You can simulate pure polygenic drift without any kind of selection pressure.

For example, here: 5 populations, 200 individuals in each, 100 genes (each giving +0 or +1), 100 generations of reproduction.

You get polygenic drift. Evolution also has selection pressure and other things influencing this. But even pure genetic drift can give you populations differing from eachother after 100 generations.
One example of a polygenic trait would be height. Which is why some populations, like the pygmies, are shorter on average.

When the genes of people who lived 42000 years ago were observed, scientists found how people who previously only had the genes for brown eyes managed to create offspring with genes unique to blue eyes, which the parents didnt possess. Obviously the child had to inherit the genes for brown eyes, but why did he have his own unique blue eyes genes? Because the brown eyes genes, or some of them mutated and gave the child the blue color of eyes.

There’s real empirical evidence of mutations and speciation occurring in animals or micro organisms that live short lifespans and reproduce very frequently

The effects in such animals ca be observed within a few years because each generation is so much shorter and more offspring are produced per female and therefore a high number of mutations can be naturally selected for within a shorter time span

This is literally what happened with the covid virus for example, it mutated and the mutation was genetically favourable so it got passed on and hence we had a new endemic virus

You can’t observe these effects on humans because we live every long lifespans and reproduce infrequently compared to smaller organisms- but if you scaled it up to say 1000s of your ears rather than a few years you could do.

For instance when humans first migrated to Europe they developed fairer skin, because it was favourable for absorbing vitamin D and they didn’t require so much melanin to protect from the hard African sun
