Heat doesn't denature protein structures to improve "anything" it is heat and it doesn't have a goal. Also, since you are saying it improves digestion/amino blahblah bullshit without evidence why do humans not choke on raw foods? Heat denatures protein structures to improve digestion and amino acid bioavailability as well as a shit ton of micro nutrients that your body would not have absorbed as well.

The only time cooking does improve bioavailbility is for vegetables, and for meats it destroys the nutrition content. I mean it's established heat sensitive nutrients and water soluble nutrients are lost during cooking
